Document Requirements
Generally speaking, most documents that call for an original signature can be notarized, but please bear in mind the following:
Note: California Notaries notarize signatures on documents & not the document itself. Notarization provides verification of a document signers willingness to sign & that the signer is the person identified by the signature. A notarization does not prove the truthfulness of a document, nor does it validate a document &/or render it legal.
Examples of documents that can be notarized:
Health Care Directives
Affidavits
Real Estate/Loan Documents
Documents that call for a notary stamp
Copy’s Certified by Document Custodian
Traffic School Tests
Legal Papers
Powers of Attorney
Documents that Cannot be Notarized:
The State of California does not allow a Notary Public to notarize the following documents:
Copies of Vital Records
Fax’s w/out original signature
Photos
Passports
Blank or Incomplete Documents
Copies of Documents – (see Copy Certification by Document Custodian)
Wills–-unless accompanied by written instructions, as well as the notarial certificate, from an attorney (click here to read what the National Notary Association says about notarizing Wills — it is about ½ way down the page).

Disclaimer: I am not an attorney & can not provide legal advice, documents, or suggestions outside the Notary Public field. Notarization fees are set by the State of California. Document & Identification standards & requirements are also set by the State of California.
Note: A Notarization provides verification of a document signer's willingness to sign & that the signer is the person identified by the signature. A Notarization does not prove the truthfulness of the document or it's contents,, nor does it validate a document &/or render it legal.
